Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1/4 cup honey
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped almonds or hazelnuts optional
  • Powdered sugar, for dusting

Instructions:

In a bowl, whisk together the flour, baking soda, salt, and all the spices

In another bowl, cream the butter, brown sugar, molasses, and honey until light and fluffy

Beat in the egg and vanilla extract until well combined

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms

If using, fold in the chopped almonds or hazelnuts

Form the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour

Preheat the oven to 350F 175C and line baking sheets with parchment paper

On a floured surface, roll out the dough to about 1/4-inch thickness

Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets

Bake for 8-10 minutes or until the edges are slightly golden

Let the cookies cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely

Dust the cooled cookies with powdered sugar before serving
