Harissa Potatoes over Garlicky Kale



A delicious and hearty vegan dish featuring crispy harissa-spiced potatoes served over garlicky sautéed kale.

Ingredients:

  • 4 medium potatoes, diced
  • 2 tablespoons olive oil
  • 2 tablespoons harissa paste
  • 1 bunch kale, stems removed and chopped
  • 3 cloves garlic, minced
  • Salt and pepper, to taste

Instructions:

Get the oven ready by heating it up to 400F 200C

Put diced potatoes in a bowl and add olive oil, harissa paste, salt, and pepper

Toss the potatoes until they are evenly covered

Place potatoes on a baking sheet in a single layer

Roast for 25 to 30 minutes, or until golden brown and crispy

Put a tablespoon of olive oil in a large skillet and set it over medium-low heat while the potatoes roast

Cook for one to two minutes, until the garlic smells good after adding it

Add the chopped kale to the pan and cook for 5 to 7 minutes, until the kale is soft and wilted

Add salt and pepper to the kale to taste

Put the potatoes on top of the garlicky kale when they are done

If you want, you can add more harissa paste as a garnish
