Coq Au Vin with Mashed Potatoes
Coq Au Vin is a traditional French dish made with chicken that is braised with wine, bacon, and vegetables. The sauce is thick and full of flavor. With creamy mashed potatoes on top, it's a hearty and filling dinner that's great for cold nights.
Ingredients:
- 4 chicken thighs
- 4 slices of bacon, chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1 cup red wine
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons butter
- 1/2 cup heavy cream
- 4 large potatoes, peeled and cubed
- 1/4 cup milk
- 2 tablespoons chopped parsley
Instructions:
In a large skillet, cook bacon until crispy
Remove and set aside
Add chicken thighs to the skillet and brown on both sides
Remove and set aside
In the same skillet, add onion, carrots, and garlic
Cook until softened
Pour in red wine, chicken broth, tomato paste, thyme, salt, and pepper
Bring to a simmer
Return chicken and bacon to the skillet
Cover and cook for 30 minutes
Meanwhile, boil potatoes until tender
Drain and mash with butter and heavy cream
Season with salt and pepper
Serve Coq Au Vin over mashed potatoes, garnished with chopped parsley
