Grilled Greek Pita Pizzas



These Grilled Greek Pita Pizzas are a delightful fusion of Mediterranean flavors, with whole wheat pitas serving as the perfect base. Topped with cherry tomatoes, feta cheese, Kalamata olives, red onion, and fresh oregano, these pizzas are a quick and tasty addition to your barbecue repertoire.

Ingredients:

  • 4 whole wheat pitas
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh oregano, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

Instructions:

Preheat the grill to medium-high heat

In a small bowl, whisk together olive oil, minced garlic, salt, and black pepper to create a dressing

Brush one side of each pita with the dressing mixture

Place the pitas on the grill, dressing side down, and cook for 2-3 minutes or until grill marks appear

Flip the pitas and evenly distribute cherry tomatoes, feta cheese, olives, red onion, and oregano over the grilled side

Close the grill lid and cook for an additional 5-7 minutes or until the edges are crispy, and the cheese is melted

Remove the grilled Greek Pita Pizzas from the grill, slice, and serve hot
